A few weekends ago to celebrate finishing another semester of graduate school for Jordan and launching version 2.0 of our app for me, we went up to visit our friend Katie. Katie and I were roommates in college. She was the first person I met at Georgetown and one of the big reasons I stuck around. She embraced my California quirks, somehow tolerated my insane homesickness and was generous enough to bring me along when she’d hang out with her older brother Chris and his friends. Georgetown was a much friendlier place because of knowing Katie, and there’s no way I would’ve made it through the first semester if we hadn’t met.

When we graduated, I moved to San Francisco to live with Jordan, and after year or two in DC, Katie also succumbed to California’s siren song. Now she works as a chef at the Boonville Hotel Restaurant, after working for a few years at the Philo Apple Farm, all just a few hours north of us in the Anderson Valley.

Our weekend in Boonville was perfect. I almost don’t want to write about it, and just keep it as a secret to savor all to myself, in case writing somehow makes the whole thing seem a little less magical. But this shrimp dish is too good not to share. So here goes.

We stopped in at the restaurant to say hi to Katie and tour the kitchen, ate an ice cream cone, went hiking in an old growth redwood forest, gave my new-old 4×5 camera a spin, were treated to the best of meals at the hotel, stared up at a star-filled sky while standing next to a fire, ate breakfast with new friends on a patio with breathtaking views, got a personalized tour of The Apple Farm and its many plants and animals, drank hard cider under a canopy of mulberry trees, sat in the sun tasting wines and catching up.

The weather was wonderful, clear and warm. Jordan and I spent two whole days off in a row together. There wasn’t cell phone reception. We got to hang out with one of our most favorite people and see the beautiful life she’s built for herself first hand. We left Boonville more relaxed than we’d felt in months, our bellies full and hearts fuller.

This shrimp dish was the first course of our meal at the Boonville Hotel. It’s a perfect dish for late spring or early summer when it’s starting to get warm and the corn is coming in. The charred flavor of grilled shrimp goes wonderfully with the creamy aioli, and that’s offset by the tangy vegetable salad. Grilled bread soaks up all the juices from the salad, and yet still has some chew to it. If you’re worried about the pickles being weird, they’re not. It all just works.

Shrimp Salpicon, adapted from the Boonville Hotel Restaurant
Serves four
For the shrimp
2 lbs fresh shrimp, peeled
1 lemon, zested
2 tablespoons olive oil
2 teaspoons pimente d’ville or a pinch of paprika and bit of cayenne
salt

For the salsa
1 cucumber, diced
1 red onion, diced
2 – 3  bell peppers, diced
2 ears of corn, cut off the cob
1/2 cup cornichon, sliced
1/4 cup olive oil
1/4 cup white wine vinegar
juice from a lemon
salt and pepper

To assemble
12 slices of crusty bread
aioli, thinned with a little more lemon juice

Clean the shrimp and put them in a bowl. Add the lemon zest, oil, pimente d’ville and season with a pinch of salt. Cover and refrigerate.

Dice up the vegetables and put them in a big bowl. Add the olive oil and vinegar and stir to combine. Season well with salt and pepper. The salad should be pretty tangy and have extra dressing pooling at the bottom of the bowl.

Slice the bread into 1/2 inch slices. Arrange them on a baking sheet and brush with olive oil. Under the broiler or on a grill, toast both sides of the bread.

After your bread is toasted, grill the shrimp. We cooked ours in a cast iron pan over medium-high heat. At the hotel they cooked them on the grill. Do whichever is easiest for you, but be sure not to overcook the shrimp. They only take 2 to 3 minutes per side.

To serve, put a few slices of toasted bread on a plate. Mound the salad on top, making sure to pour some of the extra dressing onto the bread. Top with the grilled shrimp and drizzle the whole thing with aioli. Enjoy!

grits with grilled shrimp and zucchini

You may remember a few months back when I extolled the virtues of grits. Well, we decided to give a lighter, more summery version a try last week. Verdict: still really, really good.  Certainly makes the mounds of zucchini you undoubtably have crowding your fridge go down easier.

Grits with Grilled Shrimp and Zucchini
For the grits
2 cups milk
2 cups water
1 1/2 t salt
1 cup grits
1/4 cup parmesan, grated
2 T butter

For the zucchini
3 zucchini, sliced into 1/2 inch slices
olive oil
1 garlic clove, grated
salt, pepper, chili flakes

For the shrimp
1/2 lb shrimp, shell on preferred
1 lemon, juiced
2 T olive oil
1 garlic clove, grated
salt, pepper, chili flakes

In a large bowl, marinate the sliced zucchini in olive oil, garlic and seasonings. In a small bowl, marinate the shrimp in  lemon juice, olive oil, garlic and seasonings. Set aside.

In a medium saucepan over medium-low heat, bring the milk, water, and salt to a boil. Once boiling, whisk the grits slowly into the milk mixture. Turn the heat to low and cover. Cook the grits 20 – 25 minutes, whisking every five minutes or so to avoid clumps. Once they are thick and just before serving, whisk in the butter and grated parmesan. Check for seasoning and add more salt if necessary.

While the grits are cooking, heat a grill or grill pan over medium-high heat. Grill the zucchini, 4 – 5 minutes per side, until browned. After you’ve cooked all the zucchini and the grits are nearly done, cook the shrimp. They only need about 2 minutes per side.

Serve a mound of grits topped with shrimp and grilled zucchini, hot sauce on the side for the boy.

shrimp tacos

I’ve already ranted about my love of mexican food so I’ll spare you all those details. Here is another taco recipe, and it is even easier than the carnitas tacos from last week.

Shrimp Tacos

1/2 lb shrimp, peeled and deveined
1 lemon
1 lime
1 orange
1 clove garlic, grated
1 T olive oil
Salt, chili flake
Tortillas, radishes, salsa, cilantro and sour cream for serving

Clean the shrimp. In a small bowl mix the citrus juices, garlic, olive oil, salt and a dash of chili flake. Add the shrimp and toss to coat. Let marinate for 15 minutes. Heat a skillet over medium high heat. Toss in the shrimp  and cook until they are just pink, about 3 minutes per side. Pour the shrimp into a bowl. Wipe out the skillet and heat the corn tortillas until they just start to brown on each side. While these are warming, pop the tails off of the shrimp.

Put a few shrimp in a tortilla and add your desired toppings. I went for all of the condiments I described above. It was delicious, and only took about 25 minutes to prepare. Take that Rachel Ray.

fideos with mussels and shrimp

The first time I had fideos was at Jaleo in Washington D.C over 3 years ago. Those little worm-sized noodles were incredible – just like pretty  much everything else on the menu – and I’ve been wanting to enjoy them again ever since. Sadly, San Francisco lacks a Jaleo. You can imagine how stoked I was when I found dry fideos at the Middle Eastern market just down the block from us for $1.49! I figured they were one of those specialty import products that sell for $13 at Williams Sonoma, but no. Hurray! I poked around on the internet for recipes and combined two (one from Jose Andres and one from Mario Batali) for this meal.

Fideos with Mussels and Shrimp

1 lb fideos

1/4 c olive oil

1 onion, diced

2 carrots, diced

4 cloves garlic, diced

1-16 oz can of crushed tomatoes

1 quart vegetable stock

1 t spanish paprika

1 bottle clam juice

1 cup white wine

1 pinch saffron,

1 bay leaf

salt, pepper

1 lb mussels, rinsed and debearded

1/2 lb shrimp

In a dutch oven, heat olive oil until it shimmers. Add dry fideos and brown over medium heat until golden. Remove fideos from pot and set aside.

In the same pot, heat a bit more olive oil over medium heat. Add onions, carrot and garlic and saute for about 5 minutes. Add can of crushed tomatoes and the paprika and turn the heat up to high. Cook for another 20 minutes to reduce the mixture, stirring often. I’m pretty sure this is called a sofrito.

In a large stockpot heat stock, clam juice, wine, bay leaf and saffron. Add shellfish and cook until the mussels open and shrimp are opaque, about 5 minutes. Using a slotted spoon or strainer, pick out seafood and set aside. Add this seafood broth to the sofrito. Add the fideos. Cook for 10 – 15 minutes until the noodles are tender. Season with salt and pepper. Add the seafood back into the mix. Top with parsley and a squirt of lemon to serve.

When I had this dish at Jaleo, the noodles had a delightfully crispy top crust. I’m pretty certain you could attain this under the broiler for a few minutes, but we were starving after a long day at the office and so we just dug in!

paella, per se

Let’s start this off by saying, I’m a lucky girl. Why am I a lucky girl? Because my wonderful boyfriend makes me yummy dinners while I sit at the table after work and putz around on the internet. Why else am I a lucky girl? Because that same boyfriend rides his bike down to purchase quality (and reasonably priced!) seafood at Sun Fat Seafood (23rd and Mission) even though its 9 million degrees out in San Francisco today. And one more reason …

… He is incredibly dashing in the kitchen.

Let’s get down to business …

Brown some PORK! chorizo*. Take out the chorizo, but leave that delicious fat in the pan. Toss in some diced onions and garlic. Let those brown a bit. Add broth (Jordan did 3 cups of vegetable stock and 1 cup of clam juice).

*Chicken chorizo was available, but we just don’t see the point in that.

Add saffron. Ours was a gift from our neighbor and came all the way from Dubai! It adds a nice floral taste, and added bonus, the broth will turn a lovely yellow-orange color.

Bring it all to a boil and add Calasparra rice. Use 1 parts rice to 4 parts liquid. We thought “That’s crazy!” but it really is quite absorbent.

Let it simmer for 20 – 30 minutes until most of the liquid has been absorbed and it has a creamy consistency. Then toss in some veggies (we did peas and red piquillo peppers), the sausages and …

the seafood! Jordan’s catch of the day included shrimp and scallops, which he quickly sauteed in some butter before adding to the rice. He wanted to get a nice sear on the scallops, but he’s a bit out of practice. I think this means more scallops in my future!

And the final dish …

Served with lemon and parsley.

Conclusions: Jordan was looking for a paella shortcut and looks like he found one. It still took a while to execute, but not much was lost in the way of flavor. Tasty and satisfying!

But the best part of the meal (according to Jordan at least) was not his paella, but …

this romesco sauce from Bi-Rite Market (18th between Guerrero and Dolores). It was good, but I’m partial to his paella.
